What about enforcement. How do I know when they are full?

Many utilities use a Dipstick Pro or Sludge Judge to measure the grease and solids layer
of a grease interceptor. Because Schier interceptors are Hydro-mechanical grease interceptors,
not gravity style interceptors, they do not follow the same dip tube rules as a concrete grease interceptor.

Concrete grease interceptors must have a large volume of water to separate grease effectively.
As the water volume diminishes, so does their separation efficiency. Hydro-mechanical
interceptors do not rely on water volume to accomplish separation. They rely on the inlet
diffuser to slow down the flow of water and separate grease more efficiently. The patented
design of Schier's inlet diffuser also prevents the incoming water from disturbing the
grease and solids layer within the interceptor. Hydro-Mechanical grease interceptors
separate grease at the same efficiency until they reach their capacity. They do not
pass through more grease as the unit fills up, or when there are high flow periods.
